SPAM® Loco Moco Recipe
The Loco Moco is a favorite dish in Hawaii, and usually uses ground beef as its protein. However, to reflect both the locals love for the product and the subject of this episode, this recipe is using SPAM®. Do give it a try. It’s a winner.
This recipe makes 4-6 servings.
Ingredients

1 ½ Cups Basmati or Long Grained Rice

4 Eggs

Salt
-
Pepper

2 Cups Button Mushrooms (Sliced)

1 Onion (Diced)

2 Cups Beef Stock
-
½ Cup Red Wine (Optional)

1 Splash Worcestershire Sauce
-
1 Tsp Cornstarch (Mixed with water to form a slurry)

1 Carton SPAM® (Sliced)

1 Bunch Flat Parsley

Extra Virgin Olive Oil
Instructions

Prepare the rice according to instructions. I usually rinse and soak my rice and then cook in 2 parts water to one part rice.

Combine the stock, red wine and Worcestershire sauce in a saucepan and simmer until reduced by half in volume.

Add the cornstarch slurry and cook gently until it thickens.

Check for seasoning and add salt and pepper, if needed.

Fry off the slices of SPAM® in a frying pan and drain on kitchen towel.

Add olive oil to the same frying pan and bring to a moderate heat.

Add the onions and saute until soft and golden.

Add the mushrooms and saute until soft and brown.

Add in the cooked rice and stir to combine the rice and onion/mushroom mix.

Stir in half the fresh chopped parsley.

Drizzle over the gravy.

Top with slices of SPAM®.

Fry the eggs to your preference and lay on top of the SPAM®.

Garnish with the remaining parsley.
